In this week’s van life adventure, we roll into Hatch, New Mexico, aka the chile capital of the world, on a mission to taste ALL the Hatch chile goodness we can get our hands on. From the country's best burrito to green chile cheeseburgers and milkshakes, we dive headfirst into the bold, smoky flavor that makes this tiny desert town famous.

Then we head north toward Truth or Consequences for some peaceful lakeside camping. There’s just something about van life in the desert. This is the kind of camping we’re always chasing in our home on wheels.

Next stop: pure relaxation at Riverbend Hot Springs. Soaking in natural mineral hot springs right along the Rio Grande? Yes, please. The warm healing waters, mountain views, and total stillness feel like the ultimate reset after days on the road.

To wrap it all up, we head into one of our favorite New Mexico canyons for wild camping under the stars. No hookups. No crowds. Just us, the van, and that rugged Southwest landscape that keeps pulling us back.
